Crab Cake Sandwich

What a nice lunch. I use the Ultimate crab cakes from the fresh market and add sauteed finely diced red onion, yellow pepper, mayo and dijon. I remake the cakes and roll them in panko and pan saute them in butter. I used a brioche bun with some homemade remoulade on both sides and some arugula dressed in a lemon vinaigrette.
