
I bought some fresh frozen penne at my local farm store. I had no idea what to make and I thought about what I had in the freezer and pantry. I started by cooking a 1/2 lb of hot Italian sausage on low I added 1/4 of a diced red onion and cooked that until tender. I started the water to boil and added the salt and the pasta when it was boiling. I turned the heat to medium low on the sausage pan and added some fresh spinach until wilted and put in a can of rinsed cannellini beans. I saved 1 cup of the pasta water, drained the cooked pasta and put it back in the pasta pot. I added in some of the sausage mixture, some pasta water some mozzarella pearls and some parm and stirred to see what the consistence looked like added salt pepper and a splash of red wine vinegar. Lemon juice would have been optimum!
