
Oh my this was soo good! I cooked it in the slow cooker all day and then transferred it to a big pot on the stove to reduce and thicken. The smoked turkey thigh was spot on. I am going to try making a rillette with the leftover smoked turkey.
1 Package of dried black beans
1 Smoked turkey thigh
1 Poblano diced
1/2 Diced carrot
1/2 Onion diced
2 Cloves of garlic minced or grated
1 Can of Diced tomatoes
2 Bay leaves
1 Tbls cumin
1/2 Tbls chili powder
1/4 Tbls chipotle powder
1/4 Tbls Oregano
Salt and Pepper
4 Cups chicken stock
Soak the beans in water over night. Drain and rinse your beans. Put the turkey thigh in the slow cooker. Add in everything else except the stock. Start pouring in the stock until everything is covered. It may not take all of the stock. Cook on low for 8 hours. Pull out the turkey to cool. When the turkey is cool enough to handle cut it into small pieces and add back to the soup. Pour the soup into a stock pot and bring to a boil. Reduce to simmer and cook until it is thick. Garnish with chopped cilantro, lime, cheese and sour cream.
