This slow cooker recipe is great. Lots of leftovers to make an enchilada casserole in the next few days. I did not use boneless breast. I find they tend to dry out. I used 2 large bone-in breast with the skin removed and cooked it 6 hours on low. Fantastic smokey chicken good for a lot of things. These tacos were amazing. I love this salad it is so sweet and fresh. The pop from the horseradish is great with a steak. I am not a fan of the texture of prosciutto in a salad, so I crisped mine in a pan with a little olive oil. 2 Pks of Microwave multigrain rice( I use Seeds of Change 7 grain blend)
Breast of 1 Rotisserie chicken chopped
2Tbls Butter
2Tbls Flour
1C Milk
1C Chicken stock
2Tbls Dijon
1 1/2C Grated Gruyere
1/3C Greek yogurt
1C Panko
1Tbls Olive oil
Chop the cauliflower and broccoli into medium size pieces. Cut the zucchini in to half moons. Toss the cauliflower, broccoli, zucchini, onion and carrots onto a baking sheet. Pour over the olive oil and toss with your hands to coat. Season with salt and pepper and roast at 400 until tender and slightly brown, around 20 minutes. Cook your rice per package instructions. Toss rice, chopped chicken and the roasted vegetables together. For the sauce melt your butter, add in the flour. Cook the flour a minute or 2, whisk in the stock and milk. Cook until slightly thick. Off the heat whisk in the mustard, cheese and yogurt. Season to taste with salt and pepper. Pour the sauce over the chicken mixture. Pour into a 8×8 baking dish. Toss the panko and olive oil together to coat and sprinkle over the casserole. Bake at 350 for 30 minutes or until the bread crumbs are brown.
I had a leftover apple and I needed a breakfast for Sunday morning. So, this was my idea. I started with bacon waffles and thought cheddar goes with apples. I halfed the recipe. I put all of the bacon in the batter. It made 2 good size waffles. This cake is so moist. We love fruit cake but my sweetheart is allergic to corn. All of the candied fruit in a regular fruit cake have been candied with corn syrup. I bought a fruitcake fruit blend from King Arthur that has no corn syrup. I did brush the cake while it was hot with a little brandy. We really enjoy Indian food at my house. I love that everything that you need is on the sheet pan. Simple and full of flavor. I used breast instead of thighs.
