Chicken,Mushroom and Sage Casserole

Copy Cat Spinach and Artichoke Breakfast Souffle

I love to get these from Panera.

The recipe page is for ham and cheese. In the ingredients list swap 1/3 cup of spinach and artichoke dip for the ham,1/2 cup shredded Italian blend cheese for the shredded gouda and provolone slices for the 4 Tbls of gouda. I put the egg mixture in the pastry I put a Tbls of spinach and artichoke dip in the center of each pastry and top with a slice of provolone and fold over the pastry edges.

Fried Green Tomato Crab Cake Stack

If you like fried green tomatoes this will leave you speechless! I coat them in flour and then in a mixture of buttermilk and hot sauce and then into a mixture of cornmeal, flour, and creole seasoning. Shallow fry in canola. I topped the tomato with a crab cake and topped that with micro greens and remoulade sauce. Well it’s obvious this is mostly southern girl and a bit sophisticated.

Eggplant Parmesan

I like my eggplant crispy not soggy. I cut my slices, salt them and put them on a rack to drain some of the water out. I pat my eggplant dry and toss in flour, then egg wash, and into a mix of panko, seasoned Italian bread crumbs and parm. I fry them in olive oil just until brown. I put them back on the rack and into the oven at 400 about 12-15 minutes. Melt some provolone on the top and place on a bed of tomato sauce.

Rice Bowl with Chicken and Spiced Chickpeas

I did not cook the chickpeas until crispy. I find that hard to eat with a fork.
