Store bought pie dough pressed into my tart pan. I had some chard and cooked Italian sausage left from my Gnocchi on Friday. I chopped the chard sauteed that with some onion and mushrooms. Threw in the cooked sausage to warm. Let that all come to room temp. Whisked together 7 eggs, 1/2 c of heavy cream, and 1/2 c milk. Added salt, pepper and 3/4 c of grated swiss cheese. Baked at 375 for 40 minutes added 1/4 c more cheese on top and baked 10 more minutes or until the center is set. Dinner for tonight and breakfast for this week.

Locally Sourced Pot Pie

I go to the Mill Spring Farm Store every other weekend when I am off. I buy local eggs, local honey, fresh seafood brought in weekly, and meat from local farmers. I stumbled upon a pot pie in the freezer. Pot Pie in Asheville’s Cordon Blue Pot Pie. After a 10 hour day I decided to put this in the oven and make a baby kale salad. I will buy their products again! Great quality and amazing flavor.

Americas excuse to eat Mexican food. Empanadas filled with Picadillo, a green chicken tostada and a top shelf Margarita! Ole!
Chicken BB-Q

Bone in skin on breast seasoned with dry rub and 1/4 cup of bb-q sauce, covered in water and cooked in the crockpot for 6 hours on low. Pulled and warmed in a non stick skillet with stock and bb-q sauce. Air fryer hush puppies and some slaw. Hell to the yea! Sorry! The Southern part over rides the Sophisticated part some times.
Antipasti for Dinner
Wow! I again bought The Ultimate crab cake from The Fresh Market and dressed it up. I stuffed that into the mushrooms and pressed the top into some panko bread crumbs and baked them. I bought a packaged mushroom risotto and cooked that per instructions. I added some parmesan, frozen peas and cooked hot Italian sausage and put it in the fridge to cool. Take it out and add 2 eggs make your balls and insert a piece of mozzarella and roll to cover, coat in seasoned bread crumbs and cook how you prefer. I used my air fryer, or deep fry if you wish.
Leftovers!

Last nights leftover grilled balsamic chicken just became todays lunch. I made a lemon pesto mayo and added a nice heirloom tomato.
