Italian Potato Pie

This turned out better this time. It tasted good, but it didn’t hold together when I cut it last time. I as always tweaked the recipe. I used Simply brand pre-made mashed potatoes, I added the eggs and some parmesan. I sauteed some cooked and drained chopped frozen spinach with some onion then added parmesan and a little cream. Posole Verde

I bought a pound of pulled pork from a local bbq joint last week to make tostadas and have some leftover. I decided to make pozole. My sweetheart is allergic to corn, so instead of hominy I used white beans.

1/2 Onion diced

1/2 Poblano pepper diced

Cumin

1 Clove of garlic grated

1 Jar of green salsa

2 Cans of cannellini beans

Chicken stock

Chopped pork

Saute the onion and pepper in a little oil until the onions are translucent. Add cumin and garlic and saute for a minute. Add the salsa,drained beans and pork. Add enough stock to cover, bring to a boil, reduce to a simmer. Simmer 30 minutes.

Garnishes

Radish slices

Chopped cabbage

Chopped cilantro

Lime

Diced avocado

Sour cream

Pork and Shrimp Dumplings

My new air fryer made this meal a lot more healthy. I pan fried the dumplings, which is cross between a fry and a steam. But the egg rolls and rangoon were air fried. The dumpling recipe came from Chinese Soul Food. It walks you through making the dough (which I did not) to making the filling, stuffing, pleating and cooking. I used egg roll wrappers for my dumplings. I used a cookie cutter to cut out my circles.
