Short cut primavera. I used fresh store bought pasta and store bought refrigerated alfredo. I sauteed some fresh vegetable, added lemon zest and juice to the alfredo. And ta da creamy, lemony, pasta primavera.


The only thing that I added was mushrooms to the stew. I used pie crust instead of puff pastry and baked them Slow-Cooker Steak and Guinness Pie – Recipe – FineCooking

This turned out better this time. It tasted good, but it didn’t hold together when I cut it last time. I as always tweaked the recipe. I used Simply brand pre-made mashed potatoes, I added the eggs and some parmesan. I sauteed some cooked and drained chopped frozen spinach with some onion then added parmesan and a little cream. I bought a pound of pulled pork from a local bbq joint last week to make tostadas and have some leftover. I decided to make pozole. My sweetheart is allergic to corn, so instead of hominy I used white beans.
1/2 Onion diced
1/2 Poblano pepper diced
Cumin
1 Clove of garlic grated
1 Jar of green salsa
2 Cans of cannellini beans
Chicken stock
Chopped pork
Saute the onion and pepper in a little oil until the onions are translucent. Add cumin and garlic and saute for a minute. Add the salsa,drained beans and pork. Add enough stock to cover, bring to a boil, reduce to a simmer. Simmer 30 minutes.

Another amazing recipe from chef Michael Psilakis’s cookbook Live to Eat. I used the variation recipe that adds olives and chopped smoked almonds. I added chopped pepperoni and feta. Over the top yum.
