Fish with Citrus and Wilted Spinach

I so did not follow the recipe. This an old Fine Cooking magazine recipe. I found this in one of my best of Fine Cooking cookbooks. I had a hard time finding it online, but I did. I am not a fish eater, therefor I pan fried the fish and used all of the citrus components as a fresh salad on top. Shepherd’s Pie

A first in my house! Store bought mashed potatoes. Simply Brand of course. I had left over hand pie filling in the freezer, which had cubed potatoes. I made a guinness gravy and added the pie filling. I took the store bought potatoes and added green onions,cheese, sour cream and some cabbage that I cooked in bacon fat. So fancy colcannon. Now we have double potato! I used my pastry silpat that has measures and spread the potatoes mixture out to fit the fan size and topped the filling. Brushed it with butter and baked. Ta-Da Shepherd’s Pie Oh My!!

Maple Bacon Biscuits

I prove time and time again I am not a baker. These biscuits were ok, not good or great. I decided to bake scrambled eggs on a baking sheet. That went well. I took a 1/4 sheet tray and sprayed it with cooking spray, covered it with parchment that went up all the sides and sprayed it again. I scrambled together 8 eggs, 1/4 cup of cream and some salt and pepper and baked until it was set. I used the biscuit cutter to cut out rounds to go on the biscuits for breakfast.
