This was sweet and creamy and sharp. Toasted bun, dijon on one side, herbed brie on the other, topped with a grilled burger,caramelized onions and crisp bacon. I bought radish micro greens but totally forgot them. I air fried the fries and tossed them in truffle oil, salt pepper and parmesan.

This sauce is so creamy and rich. If you have someone in your house who has to have meat or its not a meal you could toss in a handful of cooked Italian Sausage. Oh my this was soo good! I cooked it in the slow cooker all day and then transferred it to a big pot on the stove to reduce and thicken. The smoked turkey thigh was spot on. I am going to try making a rillette with the leftover smoked turkey.
1 Package of dried black beans
1 Smoked turkey thigh
1 Poblano diced
1/2 Diced carrot
1/2 Onion diced
2 Cloves of garlic minced or grated
1 Can of Diced tomatoes
2 Bay leaves
1 Tbls cumin
1/2 Tbls chili powder
1/4 Tbls chipotle powder
1/4 Tbls Oregano
Salt and Pepper
4 Cups chicken stock
Soak the beans in water over night. Drain and rinse your beans. Put the turkey thigh in the slow cooker. Add in everything else except the stock. Start pouring in the stock until everything is covered. It may not take all of the stock. Cook on low for 8 hours. Pull out the turkey to cool. When the turkey is cool enough to handle cut it into small pieces and add back to the soup. Pour the soup into a stock pot and bring to a boil. Reduce to simmer and cook until it is thick. Garnish with chopped cilantro, lime, cheese and sour cream.

1 package of stew beef
1 package of sliced mushrooms
1/2 an onion sliced
1/4 cup of flour
1/2 cup of red wine
2 cups beef stock
Sprig of rosemary
Brown the beef in batches and place in the slow cooker. Saute onion in that pan until soft. Add mushrooms and cook a few minutes. Add wine and scrape up the brown bits from the bottom of the pan. Add flour and cook stirring for a minute then whisk in stock. Cook until thick. Season with salt and pepper. Put rosemary in the slow cooker and pour over the gravy. Cook 8 hours on low.


This a version of a chicken pot pie. It was not as saucy as I would like. I added a package of sauteed mushrooms and some poultry seasoning. I will make this again but maybe make a gravy instead of the egg and milk. I like the use of the spring form pan, i put a piece of parchment on the bottom. Did you eat Campbell’s bean and bacon soup as a kid? This is it but better. I changed 2 things. I used 4 cans of beans and stirred the bacon in to the pot right before serving.

I was online looking for something different for breakfast. I found this and I was soo excited! I used the base from the recipe attached, but I found another recipe that was more of a spin on a traditional bagel with lox. Red onion,capers and dill. I left out the sausage and cooked onion. I skip steps 1 and 2. I left out the cheddar. I used 4 bagels, halved cherry tomatoes, diced red onion, capers, chopped dill and 1 tbls of everything bagel seasoning. Ground chicken
Diced red onion

Mix all of ingredients together and form your patties. I spray a plate with cooking spray to put the patties on they are really sticky. Pan fry until cooked through turn off your heat add some feta and cover until melted. I use a whole wheat bun and toast it in the oven that I am keeping my zucchini warm in. Put tzatziki on both sides of the bun, Add your burger top with roasted peppers and spinach leaves and put your top on.
Sliced zucchini
Flour
2 Eggs and 2 Tbls of water whisked together
Panko
Lemon zest
Salt and Pepper

Pre heat your oven to 350. Slice your zucchini and put it in a bowl toss in flour. Then add the zucchini to the egg mixture, then toss in the panko and coat. Spray your air fryer basket with cooking spray and add enough zucchini to cover the bottom of the basket and spray the top with cooking spray. Cook for 5 minutes and turn cook 5 more minutes. Take a baking rack and cover it with foil add a baking rack sprayed with cooking spray put the cooked zucchini on the rack and place it in the oven to keep warm while you cook the rest of the zucchini. This meal is so fall. I used a pork tenderloin instead of the loin. The tenderloin cooks faster and is more tender. But the potatoes would not have had time to roast if they were raw. I once again used the microwave steam in the bag potatoes to short cut. After you wrap the pork if you will brown it a little in a non stick skillet it will help the bacon to be done when the roast is.
