This salad is so amazing. All of bright notes with the crunchy smoked almonds. I did not use the yogurt base. I made Ladolemono and tossed the whole salad with some arugula in it then topped it with the almonds and some fennel fronds. I used the ladolemono as a marintate for the chicken sprinkled on some greek seasoning before grilling and added more dressing to the chicken to serve. What a nice lunch. I use the Ultimate crab cakes from the fresh market and add sauteed finely diced red onion, yellow pepper, mayo and dijon. I remake the cakes and roll them in panko and pan saute them in butter. I used a brioche bun with some homemade remoulade on both sides and some arugula dressed in a lemon vinaigrette.

I bought a 2 1/2 lb piece of tenderloin for our Christmas dinner. It was too much for 2 people, so I cut off 2 steaks and froze them. Tada New Years Eve dinner. This was better than Christmas dinner, I think, and came together much faster. The steak was cooked perfectly. Veal demiglace makes a richer sauce, but I had no success finding that locally. This recipe reduces beef stock and I did not miss the veal. I used Simply brand already mashed potatoes and added garlic herb cheese and egg yolks and piped them out onto parchment. I cooked the potatoes and roasted the snap peas and shallots at the same time. What a great meal. I finished it off with 2 small scoops of lemon sorbet in a champagne glass topped off with prosecco. I only use iceberg lettuce for 1 thing, a poboy. So I had this lettuce in the fridge and didn’t want to throw it out. I love the flavors in a wedge salad, but it’s a pain to eat. So I I chopped the lettuce, sprinkled on, bacon, chives, blue cheese, and cherry tomatoes. Added some ranch dressing and a drizzle of balsamic glaze. This was some salad!

Santa brought a new air fryer a day early. Empanadas and mushrooms were air fried. When I make picadillo there is always extra. This time I froze it. Defrosted picadillo and I used a store bought pie crust and made my empanadas. A ziploc bag with flour, salt and lemon pepper breaded my mushrooms. A little brie with some major grey’s chutney over the top on a crispy little toast. Rounded off with an oven roasted shrimp with a spicy cocktail sauce.
